Mug cake baked in microwave

Yesterday I was looking for some recipes for the upcoming Easter and I suddenly found a quick and easy cake recipe. It is a mug cake. We all know that mug cakes are easy to make, especially when they are baked in the microwave.
I made some changes on that recipe and created it this morning.

I made two cakes with cocoa powder and coffee, and two cakes with yoghurt and berries. The latter ones became fresher because of those yummy berries!

Ingredients:

– 3 tbsp of whole grain rye flour
– 5 tbsp of cornflour
– 1/2 packet of baking powder
– 1 egg
– 1 tsp of olive oil
– 4 tbsp of milk
– 8 tbsp of eritrit
– 2 tsp of yoghurt
– 1 tsp of cinnamon
– redberries
– 1 tbsp of dutch sugarless cocoa powder
– 1 tsp of instant coffee

How to make it?

1. Mix all of the ingredients except the yoghurt, the cinnamon, the berries, the cocoa powder and the coffee. You can make the pastry with a spatula or with a handmixer, it’s up to you. I used the handmixer 😀
2. After that, devide the pastry into two parts.
3. Mix the cinnamon, the yoghurt and some berries to the first pastry.
Then mix the cocoa powder and the instant coffee to the other pastry.
4. Mix them well, and put them into mugs.

5. Put them into the microwave and bake them for about 2-4 minutes, it’s up to your microwave. You will have to bake the mug cake with the yoghurt longer.

Tip: When you make the mug cake which is with the berries, put some berries on their top after 2-3 minutes of baking.

6. Make the cakes rest. After that you can taste it!
